Fettuccine Aglio E Olio - Pasta with garlic & olive oil

Arguably, the most famous Italian pasta dish, made with 5 simple ingredients. #fettuccine#aglioeolio recipe is quarantine friendly and very simple to make.

When you are in a rush and don't have enough time to make dinner, but you are still craving food that soothes your soul, this is the pasta you need!


Ingredients :

for 2 servings

  1. Pasta: any kind, we used fettuccine

  2. Garlic: 4 cloves, or as much as you want!

  3. Chili flakes: 1 tablespoon

  4. Olive oil: 2 tablespoons to infuse garlic, out of that, use 1 tb to cook with.

  5. Lime zest: since we were out of lemons! Once I even used orange zest and it was just as fresh! 😊

  6. Parm, for garnish, optional

Directions:

  1. Cook the pasta as per your taste in heavily salted water, important since that’s the only salt we add to the dish. But also note that parm is salty.

  2. While the pasta is cooking, slice the garlic as thinly as you can. Or, you can also use a mandolin if you have one!

  3. In a pan, add the olive oil and put the garlic in the oil still cold. Cook the garlic and the oil together for maximum infusion. Flame on medium throughout the recipe. Once the garlic is golden, strain half of it out and set aside for garnish later or can be used in another recipe.

  4. In the remaining oil that’s in the pan, add the chili flakes, cook for a couple seconds and add the cooked pasta. This step goes by in a jiffy so make sure the pasta is very close to cooked when you put it in the pan.

  5. Few good tosses to mix everything. Then add the parm and toss again.

  6. Plate it and garnish with lime zest, optionally you can add Italian parsley which is the traditional way of doing it. 😊

  7. Add more parm and don’t forget some of that garlic oil we set aside!

  8. Final step is to sit on the coziest spot, turn on something you enjoy watching, and devour the pasta hot!
