Ingredients:

  • These are the ingredients for 4 burgers. Each patty is a quarter pounder.

  1. Freshly ground chuck, 80% lean : 1lb.

  2. Smoked bacon: 3 slices per patty

  3. Tomatoes, sliced: 2 per patty

  4. Lettuce, washed and dried: 1 crisp leaf per patty

  5. Pickles, on the side: as per preference

  6. Burger buns, toasted: 4

  7. Cheese, Muenster OR Cheddar: 2 slices per patty OR as required

  8. Thousand Island Dressing, 1 Tbsp. per patty

  9. Ketchup and Mustard: to spread on the bread: OPTIONAL

  • Spices and herbs for the patty. Measurements for 1lb meat - garlic powder, 2 tsp - crushed pepper, 1 tsp - salt, to taste

  • For Pizza Oil: - Oregano: 2 tsp - Thyme: 2 tsp - Chili Flakes: 2-3 tsp, as per heat tolerance - Onion Powder: 1 tsp - Neutral Cooking Oil: 1/2 cup

Steps:

  1. Make the pizza oil by mixing the spices in a heat proof bowl. Then, heat the oil to just below its smoking point and add it to the spices. Slowly and carefully. Let it rest for 45 mins. Then, strain and discard spices. Save the oil for use later.

  2. Cook bacon to your liking. Start with cold pan to render fat.

  3. Remove bacon from pan when ready and cook onions in the same pan with bacon fat.

  4. When onions are ready, remove. Do not need to color onions to golden, just cook enough to get rid of the rawness.

  5. Mix the patty with the spices listed under ingredients for patty. Do NOT over mix. Portion into 4 and cook in remaining bacon fat.

  6. Flip patty when brown on one side and add 2 slices of cheese on the browned side. Cover with a heat proof lid to melt the cheese.

  7. While the patty is cooking, toast the buns. You can either do this on a pan with some butter OR you can use a toaster and butter the buns after they are toasted.

  8. Assemble on toasted brioche buns with ketchup and mustard on the bottom. Thousand island dressing, followed by lettuce, patty, tomatoes, onions, bacon, pizza oil. Cover with top bread and serve with pickles and fries.
