Banana Bread is something that most people eat when the friendly coworker brings some to work for everyone. But now the situation is such that you actually bought 12 bananas last week - in varying shades of green -thinking you are going to eat them once they ripe, and now there are 4-5 left and you're wondering how you will get your SO to eat them, because over-ripe bananas aren't something that either of you enjoy
Whether you have old bananas lying around, or you are simply looking to bake something for the family, banana bread is always the answer to such questions! What's better? This one has rum in it!
With this recipe, you can 'bake your cake and eat it too'!
Below is a list of the ingredients, and you will find the exact measurements on my food blog here:
1. Ripe bananas: 3-4
2. Cane Sugar: 1 cup
3. Butter: 2 sticks
4. AP Flour: 2 cups
5. Baking Soda: 1 teaspoon
6. Baking Powder: 1 teaspoon
7. Salt: ½ teaspoon
8. Walnuts: ½ cup
9. Chocolate chunks, dark 60%: ½ cup
10. Milk: 1 tablespoon
11. Rum, of course: 1 tablespoon
Steps-
1. Mash the bananas into baby food consistency.
2. Mix the dry ingredients in a separate bowl and set aside.
3. Cream the butter and sugar together and add to the bananas.
4. Add in the eggs, one at a time and whisk. 5. Follow with all the other wet ingredients and mix.
6. Fold in walnut and chocolate chunks.
7. Pour into buttered tin and bake in a preheated oven at 350°F for 75 minutes.
